Avocado Toast

Hello, my name is Rachel. On our last video we made Anytime Fluffy Blueberry Pancakes. They were really good!

Today I want to show you how to make Avocado Toast with Fried Eggs. Here is the recipe. So for this recipe we are going to use 1 tablespoon plus 2 teaspoons extra virgin olive oil. See this is the oil. And for the oil we are going to use these. This is how much oil you’re going to use. One of these spoons and two of these. So you going to put one and two. And one here. And then we’re going to use one teaspoon lemon juice squeezed from lemon. Lemon in Chinese is 柠檬. And then we’re going to use salt and pepper.  A little pinch of salt. And you can put in the pepper – it’s optional. Then it says one ripe avocado. Here are our avocados. We are just going to use one. In Chinese they’re called 牛油果. Then two slices of crusty bread. This is the bread we are going to use. It’s called 意大利面包。Then two large eggs. Here is our eggs. OK let’s begin.

So right here it says step one: in a small bowl whisk together one tablespoons oil, lemon juice, pinch salt, and pinch paper. So we are going to put this one in here. Just this one. If you can’t remember how much that one was, that one is this one. Then next we’re going to put in some lemon juice. One teaspoon lemon juice. So we are going to cut the lemon over here. There you go. Fresh lemon cut. We’re just going to use this piece for today. I’m gonna cut it again just make it easy to squeeze out. And then put this in one teaspoon. Squeeze a few drops. Keep squeezing. A little bit more. There we go. Once you get your lemon juice, add a pinch of salt. it’s sticking onto my hand. 

And then step 2. Use butter knife to cut out avocado in half, separate halves and remove the pit. Scoop avocado into bowl with lemon dressing. Discard skin. Use fork to break avocado into large pieces and mash into dressing until mostly smooth.  So today we are just going to use this avocado –  it’s pretty large. We are just going to put our lemons over here for now. So we are going to cut this avocado. Change directions and cut all the way around back to where we started. Open it. Looks like this inside. it’s a small pit.
